The dish is served with vegetables or meat and it is a delicious meal for vegetarians.

According to a research study conducted by the USDA Agricultural Research Service, this legume that contains a significant amount of dietary fibre, protein and other essential nutrients is a great superfood for diabetics.

Ingredients

  • Boiled Irish potatoes
  • Boiled black beans
  • 3 Cups of soft maize boiled
  • 2 ripe bananas
  • 2 plantains boiled
  • Onions, finely chopped
  • Vegetable oil
  • Salt

Preparation

Step 1

In a sufuria, fry the onions till golden brown, add desired spices then set aside.

Step 2

In a big sufuria, mash together the boiled maize, potatoes, black beans, plantains and bananas using a wooden stick, until all is combined.

Step 3

Over medium heat, mix together the mashed food with the sauteed onions. Mix well.

Step 5

Serve while hot with beef, cabbage or matumbo and enjoy!
