- 150 grams of Butter
- 3 medium eggs
- Grated lemon skin
- 1 tsp. baking powder
- 200 grams of sifted all-purpose flour
- ¼ cup of milk
- Vanilla extract
Preheat your oven to 180°C, then grease down your baking tin.
Using a medium-sized bowl and whisk, mix the butter and sugar until light and fluffy for 5 minutes.
Break the eggs into a bowl and beat lightly, then add m, then add e by little of the butter/sugar mix, beating well after each addition.
Add the flour little by little to the egg and butter mix, folding gently then add the lemon rind and combine.
Pour the mixture into the baking and bake for 45 to 50 minutes until firm to the touch or until a toothpick inserted in the middle comes out clean.
Remove from the oven and let it cool for a couple of minutes, then put it on the rack to cool. Grate the remaining lemon zest and enjoy.
Serve with a preferred beverage or cold milk.
