Avocado rice chickpea salad

Chickpeas, also known as garbanzo beans are a healthy meal option packed with folate, magnesium, potassium and iron.

They also have a good measure of vitamin A, E and C which helps your brain and nervous system run smoothly.

Ingredients

  • Avocado slices
  • Boiled brown rice
  • Chickpeas
  • Shallots
  • Lime Juice
  • Cumin
  • Cayenne
  • Black pepper
  • Beetroot, grated
  • Dhania
  • Mango, cubes
  • Fried chicken or beef
  • Salt

Preparation

Step 1

Combine avocado, chickpeas and shallot in a bowl.

Step 2

Mix up spices and sprinkle them over salad ingredients while adding in a squeeze of lime juice, mango and beetroot then toss to combine.

Step 3

Add in the chicken and rice then combine.

Serve immediately and top with cilantro and a glass of wine or preferred beverage.
