Sweet potatoes can be made for breakfast or even supper. It is a quick-fix meal as you can readily buy the sweet potatoes precooked at a restaurant.

The best way to make crispy sweet potatoes from mushy sweet potatoes is to fry them.

Adding chilli enhances a sweet sour taste especially if you're not a sweet tooth.

Ingredients:

4 sweet potatoes

2 onions

4 red chilli

Step 1

Cut the sweet potatoes into halves or quarters. Boil them for around 20 minutes till soft.

Ensure they don't overcook to a mushy taste, retaining the firm texture is recommended. You can test it with a fork to confirm it’s well-cooked.

Step 2

Heat oil on a pan on low heat and add onions to fry till brown.

Then add the sweet potatoes at least 8 quarters frying both sides till cooked (if you have a big skillet you can add more quarters).

Cook in batches to avoid filling the pan and allow the quarters to cook evenly.

Add chili to the sweet potatoes to even out the sweetness and bring a sour taste, fry for 5 minutes.

Step 3

Sprinkle the sweet potatoes with a spice of your choice such as cinnamon or black pepper.
