How to make home made mutura

Traditionally, Mutura was prepared during events that resulted in a slaughter of cattle thus prepared by the elders.

Today, mutura, also known as African sausage, has become a popular meaty snack that most people are embracing.

It best thrives along pedestrian walks, mostly in the average and low-income estates in urban centres.

Here is how you can prepare Mutura at home.

Equipment

• Grill/pan

Ingredients

• 500g beef cut into small pieces

• 3 tbsp of Pure Mountain herb infused in canola oil

• 1 cow/tripe intestine

• 1 cup cow blood

• 1 cup chopped onions

• 2 tbsp Red chilli

• 2 tbsp Minced garlic

• Salt & pepper to taste

Instructions

1. Cook onions and garlic in canola oil, then add red chillies. Cool completely.

2. In a bowl add the chopped beef, cow blood, salt and pepper, and cooled onion mixture and combine.

3. Staff this mixture inside the uncooked stripe and tie both ends.

4. Heat a grill and cook the mutura over medium-high until it turns golden brown. Brush canola oil to avoid drying.

5. Serve with ugali and kachumbari.
