RECIPE: How to bake blueberry oat muffins at home

Oats are healthy and gluten-free whole grains. They are a great source of important vitamins, minerals, fiber, and antioxidants.

Studies show that oatmeal has many health benefits. These include weight loss, lower blood sugar levels, and a reduced risk of heart disease.

Ingredients

  • 2 medium very ripe bananas, mashed
  • 2 eggs
  • ½ Cup Greek yoghurt, unsweetened and full fat
  • 1/3 Cup coconut sugar or light brown sugar
  • ½ Cup quick cooking oats
  • ½ Cup white whole wheat flour or all-purpose flour
  • ½ Cup oat flour
  • 1 tsp baking soda
  • ½ tsp vanilla paste or vanilla extract
  • pinch of salt
  • ½ Cup blueberry, chopped
  • ¼ Cup chocolate chips (optional)

Preparation

Step 1

Preheat the oven to 175C

Step 2

Line a muffin pan with paper liners, optional to coat them with cooking spray or a little oil.

Step 3

In a bowl, mash the bananas and add the eggs, Greek yoghurt, sugar, and quick-cooking oats. Stir to combine and let sit for 10 minutes to thicken. Do not skip this step, it is important to get high, moist muffins.

Step 4

After 10 min, add the rest of the ingredients except blueberries and chocolate.

Step 5

Stir to combine and then gently fold in the blueberries and chocolate chips. Fill the prepared muffin liners and top with little oats.

Step 6

Bake the muffins for about 20 minutes, remember all ovens are different so start checking your muffins after 18 minutes.
