Served as a salad in sandwiches, added in buns or wraps, this avocado egg salad is creamy, flavorful, and very easy to make.
This is a dish that can be prepared for your kids on crazy weekends or as a snack.

Ingredients
- 4 hard-boiled eggs
- 1 avocado
- 1 tbsp mayonnaise or Greek yoghurt
- ¼ tsp salt
- ¼ tsp freshly ground black pepper
- ⅛ tsp smoked paprika (optional)
- 2 tsp lemon juice
- ¼ cup red onion finely diced
- chopped chives for garnish
Preparation
Step 1
Remove the shells from the hardboiled eggs, then separate the egg whites from the egg yolks.
Step 2
Using a medium bowl, mash the avocado then add in the yolks. Mash until combined.
Step 3
Add the mayonnaise or yoghurt, salt, pepper, lemon juice, and paprika to the avocado/yolk mixture and stir to combine.
Step 4
Chop the egg whites then add minced onion to the avocado/yolk mixture and stir to combine.
Step 5
Chill for at least 1 hour. Serve over lettuce/ tomatoes, as egg salad sandwiches.
