Ingredients
- 5 tablespoons butter
- 1 ½ cups fresh blueberries
- ½ cup sugar
- ¾ cup sour cream
- Lemon zest
- 1 large egg
- 1 ½ teaspoon baking powder
- ¼ teaspoon baking soda
- ¼ teaspoon salt
- 1 ½ cups all pall-purpose flour
Preparation
Step 1
Preheat the oven to 190 degrees and line a muffin pan with cupcake liners or spray with non-stick cooking spray.
Step 2
In a bowl whisk flour, baking powder, baking soda, and salt then set aside.
Step 3
Add melted butter, sugar, sour cream, eggs, and lemon zest until everything is combined.
Step 4
Stir in the flour mixture and then fold in the blueberries.
Step 5
Spoon muffin batter into the prepared muffin pan and bake for 20 to 30 minutes until a toothpick inserted comes out clean.
Step 6
Remove from the oven and let sit for a couple of minutes then transfer to a cooling rack to cool.
