With a few ingredients, making a delicious passionfruit cake is easy.
Ingredients
- 2/3 cup (160ml) passionfruit pulp – 5 passionfuits
- 250-gram butter, softened
- 1 tablespoon finely grated lemon rind
- 1 cup (220g) caster sugar
- 3 eggs
- ¾ cup (180ml) milk
- 2 cup (300g) self-rising flour
Lemon syrup
- 3/4 cup (165g) caster sugar
- 1/3 cup (80ml) lemon juice
- 1/4 cup (60ml) water
Preparation
Step 1
Preheat the oven to 180°C/350°. Grease and lightly flour a 24cm pan.
Step 2
Strain your passionfruit seeds over a jug to get the seeds and the juice separately.
Reserve juice for cake mixture, and seeds for lemon syrup.
Step 3
Beat butter, rind, and sugar in a small bowl with a mixer until light and fluffy.
Beat in the eggs, before adding in milk and passionfruit juice. Add in the sifted flour in two batches. And combine.
Step 4
Pour the mixture into the pan. Then bake the cake for 1 hour or until a toothpick inserted into the center comes out clean.
Step 5
Leave cake in the pan for 5 minutes before turning it onto a wire rack placed over a tray.
Step 6
To make the lemon syrup, place sugar, lemon juice, water, and half the reserved passionfruit seeds in a small saucepan. Stir over heat, without boiling, until sugar dissolves.
Step 7
Pour hot syrup over hot cake; serve cake warm or freeze for later use.
