Here is how to make tasty healthy banana porridge

Not quite common in Kenya but popular in Uganda and the western part of Africa, banana porridge is not only nutritious but very yummy.

The main ingredient is bananas, also called plantains. 

Plantains are a rich source of fiber, vitamins and minerals.

They are good in promoting good immune system health.

Ingredients

  • 3 Plantains
  • 2 Carrots
  • Cinnamon stick
  • Vanilla extract
  • Sugar (brown)
  • Coconut milk ( Any milk of choice)
  • Nutmeg

Preparation

Step 1

Using a sufuria, boil 2 cups of water.

Step 2

Put the chopped plantains and Carrots in a blender and puree until smooth.

Step 3

Add the spices of choice including cinnamon stick to the boiling water and boil for a few minutes until they infuse before adding the coconut milk. Stir to combine.

Step 4

Add the pureed plantain and carrots to the mixture and stir, as you would with normal porridge for 5 minutes until everything combines.

Step 5

Add your sugar and desired spices before serving. Garnish with nutmeg or cinnamon powder. Enjoy while hot or cold, with friends and family.
