Marinating your chicken overnight before cooking always helps with the taste and crispiness.

But here is how you can prepare the chicken from scratch.

Ingredients

  • 1 whole chicken
  • 3 tablespoons butter melted
  • Salt
  • ½ teaspoon black pepper
  • 1 bunch thyme
  • 1 tablespoon fresh garlic
  • Ginger (optional)
  • Onion
  • Lemon slices for serving

Preparation

Step 1

Preheat your oven to 200 degrees.

Step 2

Pat the chicken dry with paper towel, remove the giblets by placing the chicken on top of fire or gas.

Go ahead and tuck the chicken wings underneath the breast and tie the legs together.

Step 3

In a small bowl, combine the melted butter, salt, pepper, ginger and thyme. Then use your hands to rub the butter mixture all over the chicken, making sure to get underneath the skin as well.

Step 4

Stuff the garlic, onions and thyme sprigs inside the chicken cavity.

Step 5

Place the chicken on a large baking dish and roast in the oven. Ensure the breast side is up until the skin is golden brown. Roast for about 55-60 minutes.

Step 6

Spoon the juices from the bottom of the baking dish over the chicken and allow the chicken to rest for 15 minutes before serving.
