Perfect for a nice brunch with friends and family, spinach pancakes are healthy and can go with any dish served for lunch, breakfast, or dinner.
Spinach pancakes are wholesome and completely guilt-free.
Ingredients
- 145 grams whole wheat flour approx. 1 cup
- 1 + ¼ cup soy milk or regular milk
- 1 cup baby spinach loosely packed
- 2 tablespoons ground flaxseed
- 1 tablespoon baking powder
- Optional (But Recommended)
- 1 teaspoon vanilla
- 1 teaspoon cinnamon
Preparation
Step 1
Add all the ingredients to your blender and process on high speed until pureed.
Step 2
Heat your non-stick cooking pan to medium heat and pour the batter directly from your blender spout to make pancakes that are approx. 4 inches in diameter. And let it cook until several bubbles appear.
Step 3
Flip and cook for 4 minutes until golden brown and cooked through.
Step 4
Serve with pancake or maple syrup, and fresh avocado and tomatoes. Enjoy! With a cup of coffee.
