Cream cheese lemon cake is what we call, Sunshine served on a platter.
With a preparation time of only 20 minutes and a cooking time of 55 minutes, your cream cheese lemon cake will be ready within 2 hrs.
Ingredients
- 125 g butter, chopped
- 1 cup sugar
- lemon, rind, grated
- 125g cream cheese, chopped
- 2Eggs
- ¾ cup self-raising flour
- ½ cup plain flour
Preparation
Step 1
Preheat the oven to moderate heat 170 – 150 degrees. Grease the baking pan.
Step 2
In a bowl, beat all the ingredients in an electric mixer on low speed until all is combined.
Step 3
Beat until all the mixture is smooth and changed colour.
Step 4
Spread the mixture into a prepared pan, then bake for 55 minutes.
Step 5
Remove from oven and cool on a rack. Dust the cake with icing sugar and store in the fridge (optional)
