Banana oat muffins are a simple, wholesome treat that combines the natural sweetness of ripe bananas with the hearty texture of oats.

To start, preheat your oven to 400°F (205°C) and line a 12-cup muffin tin with paper liners.

In a large bowl, mix together 1 ½ cups of all-purpose flour, 1 cup of rolled oats, ½ cup of white sugar, 2 teaspoons of baking powder, 1 teaspoon of baking soda, and ½ teaspoon of salt.

In a separate bowl, beat one egg lightly, then whisk in ¾ cup of milk, ⅓ cup of vegetable oil, and ½ teaspoon of vanilla extract.

Stir in 1 cup of mashed bananas until well combined.

Gradually add the dry ingredients to the wet mixture, stirring gently until just blended—be careful not to overmix, as this can make the muffins dense.
