Apart from breakfast, eggs can be prepared as a dish. Egg curry is simply boiled eggs smothered in a super-rich and creamy curry sauce.
Ingredients
- 6 boiled eggs
- Vegetable oil
- 1 White onion, finely chopped
- 4 cloves of garlic, grated
- 1 Tbsp. Ginger, grated
- 2 Tbsp. Curry powder
- 1/2Tsp black pepper
- Tomato paste
- 1 Tsp. Cumin powder
- Coconut milk
- Salt to taste
Preparation
Step 1
Pour some cooking oil into a sufuria and throw in the onions. Cook the onions until golden brown
Step 2
Add in the garlic and ginger and stir before adding the curry powder, black pepper.
Step 3
Add in the tomato paste and coconut milk then stir for another 2 minutes.
Step 4
Bring to boil before adding in the boiled eggs.
Step 5
Reduce the heat, cover and let it simmer for a few minutes.
Garnish with Dhania (coriander) and serve hot with rice or ugali.
