Recipe: How to cook vegetable rice and coconut beans

Rice and beans is a popular meal among our households.

It is also one of the main meals sold at our local "kibandaskis' due to its affordability and taste.

There are different ways to make your ordinary rice tantalizing and pleasing to the eye. It can be done by adding vegetables and frying rather than the usual boiling.

For beans, one of the best ways to add flavor is to use coconut cream.

Ingredients

1/2kg rice

2 cups of beans

1 clove of garlic

1 onion

3 tomatoes

5 carrots

1 coriander

Cornflour

1 packet of coconut cream(250gms)

Cooking oil

Salt

Step 1

It is advisable to soak the beans overnight. If bought precooked you can rinse thoroughly before cooking. Boil the beans for 1hr 30 minutes till soft. Drain the water once ready.

Step 2

Chop the vegetables and put them in separate bowls. Set up a sufuria on the oven at medium heat and add 2 tablespoons of cooking oil. Add the onions and fry till brown, then add garlic.

Step 3

Add the tomatoes and ½ cup water with corn flour. Stir till a thick soup is made and let it boil for 2 minutes.

Step 4

Add the coconut cream to the soup.

Step 5

Put the beans in the soup and stir till the beans are well coated in the coconut cream. Garnish the beans with coriander.

Step 6

Fry onions and diced carrots in a pan and 4 cups of water and Boil 1/2 kg of rice till ready.

Step 7

Serve when hot and enjoy.
