  • 500g sliced matumbo
  • 2 cups maize flour (for ugali)
  • 1 large onion, finely chopped
  • 2 tomatoes, diced
  • 3 cloves garlic, minced
  • 1 teaspoon ginger, grated
  • 2 tablespoons vegetable oil
  • 1 teaspoon cumin powder
  • 1 teaspoon coriander powder
  • 1 teaspoon paprika
  • Salt and pepper to taste

Preparation

Step 1

In a pot, bring water to boil.

Gradually add maize flour while stirring continuously to avoid lumps.

Keep stirring until the mixture thickens. Reduce heat and cover, allowing it to cook through.

Matumbo preparation

Heat oil in a pan over medium heat.

Add chopped onions, garlic, and ginger. Sauté until the onions are golden brown.

Add boiled matumbo slices and cook until browned on both sides.
