Steps to make delicious Mukimo

Mukimo is a staple food in Central Kenya.

It consists of mashed potatoes mixed with pumpkin leaves.

To make yummy mukimo you need the following ingredients 

  • Two cups of shelled green peas
  • Two cups of shelled grain maize
  • Five leaves of pumpkin
  • Six medium potatoes
  • Salt

Preparation

Step 1

Boil the maize and the peas in a saucepan until tender.

Then peel and wash the potatoes, and add the potatoes to the boiled mixture.

Wash the pumpkin leaves, remove the stalk, and place on top of the potatoes to cook.

Step 2

When the potatoes are cooked, remove and drain the excess water into the bowl.

Add half a teaspoon of salt and then mash using a wooden spoon or a masher.

If the mukimo goes to dry, add the drained liquid and continue mashing until smooth.

Step 3

You may garnish with grated carrots or chopped tomatoes.

Then serve and enjoy your meal when still hot.
