They can be in the form of scrambled or hard-boiled and can also be used in baking pastries.

This is an interesting way of spicing up your eggs that you could share with your family and friends for breakfast or brunch.

Here's how to prepare sausage-coated scotched eggs;

Ingredients

  • 5 sausages
  • 5 eggs
  • 1/2 teaspoon of paprika
  • 1/2 teaspoon of black pepper
  • A pinch of salt
  • 1/2 teaspoon of turmeric
  • Breadcrumbs/crushed cornflakes
  • Cooking oil

Preparation

Step 1

Boil four of the eggs for around 15 minutes.

Step 2

Remove the top skin of the sausages exposing the inner part and put them on a plate.

Step 3

Mash and flatten the sausage meat on a plate with a fork and add the spices, mixing them up so that they blend in well.

Step 4

Take out the eggs shells when they are ready and coat them with the spiced-up sausage meat. (Make sure each egg is fully coated with the sausage into a ball shape.)

Step 5

Beat up one egg in a bowl and place the breadcrumbs on a separate plate.

Step 6

Dip the coated balls of eggs in the beaten egg then dip them in the breadcrumbs/crushed cornflakes. (Ensure they are evenly coated)

Step 7

Heat up the oil, put in the balls of scotched eggs and deep fry them under medium heat until they are golden brown.

Step 8

Cut up the scotched eggs into half and serve hot with ketchup or any sauce of your choice.

You can have them for breakfast or as a light mid-day snack.
