RECIPE: Easy to make chicken pilau

Whether you like beef or chicken, pilau is a dish you can prepare in the comfort of your home in very easy steps.

Ingredients

  • 6 cups of Chicken broth
  • 2 cups of Rice
  • 2 red onions, chopped
  • 1 Lb. Chicken, pieces or cubes
  • Pilau masala
  • 3 cloves Garlic, grated
  • 1 Tbsp. Ginger, grated
  • Cooking oil
  • 1 Tsp Cloves
  • 2 Tbsp. Cumin seeds
  • bay leaves
  • tomato paste
  • Salt
  • ¼ cup fresh cilantro roughly chopped

Preparation

Step 1: Using a sufuria, heat oil and then add the onions. Fry until the onions start to turn golden brown

Step 2: Add garlic and ginger, and stir until fragrant.

Step 3: Add the chicken, pilau masala, bay leaves, cilantro, and salt to taste. Cook until the meat browns and caramelises.

Add the blended tomatoes or tomato paste and stir occasionally for about 4 minutes.

Step 4: Add the chicken broth and cook for 8 to 10 minutes bringing to a boil.

Step 5: Stir in the washed rice, and cover tightly with aluminium foil paper (to keep the steam in) if necessary.

Step 6: Reduce the heat to low and cook for 20 minutes until the rice is cooked and all the liquid is absorbed.

You can put a dry cooking stick in the sufuria with the rice to see if it comes out wet.

Step 7: Dice onions, and tomatoes and add a sprinkle of salt to make kachumbari.

Serve and enjoy with the Kachumbari and a fresh banana.
