Easy homemade grilled peri peri chicken recipe

peri-peri sauce is typically made from crushed chillis, lemon, pepper, garlic, salt, onion, bay leaves, vinegar, and oil. 

Peri peri chicken is best enjoyed with rice or fries. You can still enjoy it with mashed potatoes.

Ingredients

  • 50 pounds Chicken drumsticks and thighs on the bones (1134 gms)
  • 1 tsp Paprika
  • 2 tbsp Lemon Juice
  • ½ cup Homemade Peri Peri Sauce
  • 3 tbsp Vegetable oil
  • Salt

Preparation

Step 1

Take the chicken drumsticks & thighs in a clean dry bowl. Remove the chicken skin for extra flavor.

Step 2

Slice each piece of the chicken diagonally a few times then rub in a mixture of salt, paprika & lemon juice

Step 3

Next, add the homemade peri peri sauce and rub well to coat.

Step 4

Cover the bowl with a cling film and pop it in the fridge.  Marinate for 3 to 4 hours.

Step 5

Over medium heat set an iron skillet grill. Brush with vegetable oil and arrange the chicken pieces shaking off the excess marinade without overcrowding.

Step 6

Cook them rotating to side after few minutes until fully cooked.

Step 7

Serve hot and enjoy with rice, fries and your favourite dip sauce.
