Lentils are rich in fibre, folate, and potassium making them a great choice for the heart, and managing blood pressure and cholesterol. 

The dish is vegan and extremely cheap to make.

The soup is infused with ginger, lemon, cinnamon, and turmeric, all brilliant agents for combatting colds. 

Ingredients

  • Vegetable oil
  • 1 large onion, chopped
  • Dhania
  • 1 Tablespoon ground ginger
  • 1 teaspoon ground cinnamon
  • 1 teaspoon ground turmeric
  • 1 teaspoon black pepper, to taste
  • 2 blended tomatoes
  • 1 cup lentils (dry)
  • 2 Tablespoon tomato paste (optional)
  • 1 ¼ teaspoon salt
  • ¼ cup water
  • 2 Tablespoon all-purpose flour – thicken the soup

Preparation

Step 1

Using a sufuria, warm the oil before adding the onions. Cook for 5 minutes or until they turn light brown.

Step 2

Add your spices and stir to bring out the flavours. Add in the blended tomatoes, water and lentils then stir. Reduce the heat and cover. Let it simmer for 30 minutes, and bring to boil.

Step 3

Stir occasionally then add the tomato paste before adding flour and a little water.

Serve with fresh lemon juice, chopped Dhania, and toasted bread.
