Ingredients
- 2 large tomatoes, peeled
- 1 large cucumber, peeled, halved
- 1 onion, peeled and halved
- 1 green bell pepper, diced
- tomato juice
- 1/4 cup extra-virgin olive oil/ Vegetable oil
- 1/3 cup red wine vinegar
- 1 1/2 teaspoons salt
- 1/4 teaspoon black pepper
- a few dashes of hot sauce (optional)
- 1 clove of garlic, minced
Preparation
Step 1
Using a blender, blend 1 tomato, 1/2 of the cucumber, 1/2 of the onion, 1/4 of the bell pepper, and 1/2 cup of the tomato juice until smooth.
Step 2
Transfer the mixture to a bowl and add the remaining tomato juice, oil, vinegar, salt, pepper, and hot sauce.
Step 3
Cover and refrigerate for 2 hours.
Step 4
Dice the remaining vegetables and refrigerate them separately from the soup.
Step 5
Stir the garlic and chopped vegetables into the soup before serving with a topping of vegetables. Then serve cold.
