Perfect for breakfast or snack breaks, banana porridge is quite delicious, healthy, creamy, and gluten-free.

Green bananas are also high in pectin, both pectin and resistant starch in the unripe banana is great for controlling blood sugar and gut health.

Ingredients

  • 3 medium green bananas, peeled
  • 1 cup coconut milk
  • 1/2 teaspoon salt
  • 3 cups of water
  • 1/2 cup organic brown sugar
  • 1 teaspoon vanilla essence
  • 1/4 teaspoon ground nutmeg

Preparation

Step 1

Peel green bananas and roughly chop them before placing them in a blender along with coconut milk and salt.

Step 2

Process in a high-speed blender until creamy.

Step 3

Bring water to boil in a large sufuria on medium heat. Then slowly pour in the banana mixture while whisking constantly to prevent the banana porridge from forming lumps.

Step 4

Bring the porridge to a boil and reduce heat to simmer for 15 minutes. Add sugar, and spices, stir, and serve!
