Eating sweet potatoes daily can fulfill your body's need for potassium.
For this recipe, if you do not have an oven, you can roast or grill on charcoal or firewood.
- 4 red sweet potatoes
- pinch of salt - for serving
Preheat to 400° F. Wash the sweet potatoes and using a fork, poke a few holes in them to allow venting
Bake until soft and fork-tender, about 45 minutes to 1 hour depending on the thickness of the sweet potatoes.
Poke using a toothpick or fork to check if it is done.
Remove from the oven and serve once cool enough to handle.
Note: The skin should be wrinkled and easily separate.
Sprinkle with salt if preferred. Enjoy with a cold and hot beverage.
