This cuisine is common among the Swahili people. It is a perfect dish for breakfast; with a cup of tea, cocoa or coffee and it can also be served with soup or as an accompaniment to many meals like beans, beef, or cereals.
Ingredients
- 3 cups all-purpose flour
- 3/4 Tbsp. instant yeast
- 5 Tbsp. sugar
- 1 Tsp. ground cardamom powder
- 3/4 cup heavy coconut milk
- Vegetable oil
- ¾ cup of Coconut milk
Preparation
Step 1
Sieve the flour into a bowl then add in the yeast, sugar and cardamom.
Step 2
Start slowly adding in the coconut milk as you kneed until you get a firmer dough.
Step 3
Roll it into a ball and using a sharp knife, make a deep slit through it. It should look ‘stretchy’ on the inside.
Step 4
Put the ball in a bowl and cover it with a wet cloth for a couple of hours.
Step 5
Remove the dough from the fridge and make a ball.
Step 6
Flour the surface and place the ball then proceed to flatten the ball using a rolling pin and cut it into desired shapes.
Step 7
Fry in very hot oil and give it time before you turn. Ensure both sides have a nicely browned colour.
Step 8
Remove from oil and put in a dish or tray to cool.
Step 9
Serve and enjoy with tea, milk or desired dish.
