Ingredients
- 1 Egg, separated from the yolk
- 1 egg yolk
- ¼ cup caster sugar
- 1 2/3 (120g), shredded coconut
- Butter
Preparation
Step 1
Preheat the oven to slow (150 to 130 degrees). Grease the oven tray with butter.
Step 2
In a small bowl, beat the egg yolk and sugar until creamy then add the coconut
Step 3
In a different bowl, beat the egg white until it foams
Step 4
Stir in the yolk-coconut mixture and stir gently
Step 5
Drop the heaped teaspoon of the mixture onto the prepared trays then bake for 15 minutes.
Step 6
Reduce the oven temperature to 100 or 120 degrees. Then bake for another 30 minutes or until golden brown
Remove from oven and cool. Enjoy with the desired beverage or a cold glass of mango or apple juice.
