How to prepare raspberry and coconut muffins in just 30 minutes

Muffin comes from the French word moufflet which means soft.

With a preparation time of 10 minutes and a cooking time of 20 minutes, your fresh muffins will be ready within 30 minutes.

Ingredients

  • 2 ½ cups (375g) self-rising flour
  • 90 g butter, chopped
  • 1 egg, beaten
  • 1 cup (200g) caster sugar
  • 1 ¼ (310 ml) cups milk
  • 1/3 (25g) cup desiccated coconut
  • 150 fresh or frozen raspberries
  • 1 cup caster sugar
  • 2 tbsp. shredded coconut

Preparation

Step 1

Preheat the oven to moderately hot (200 - 180) degrees, fan-forced.

Step 2

Grease an 80 ml muffin pan with butter.

Step 3

In a large bowl, mix in the flour, butter, milk, coconut, raspberries, eggs and mix with fingertips until everything has combined well.

Step 4

Divide the mixture among the holes of the prepared pan, then sprinkle the shredded coconut.

Step 5

Bake for 20 minutes. Once baked, slide in a toothpick at the centre, ensure it comes out clean.

Step 6

Set aside in a rack to cool. Enjoy them with a glass of cold milk or juice with friends and family.
