Boudin sausages are available at the nearest grocery store but if you are not a big fan of pork, you can use a regular minced meat instead.

Boudin sausages are made of cooked pork and rice and then mixed with some seasoning before it is stuffed into a casing. 

To save you the hustle, buy ready made boudin sausages.

Ingredients

  • A packet of Boudin Sausage
  • 2 Large Eggs
  • ½ Cup of milk
  • 1 Tablespoon ( paprika, dried oregano, black pepper powder, dried basil, salt, cayenne pepper and dried thyme)
  • 2 Cups Breadcrumbs, plain
  • 1 Teaspoon Onion Powder
  • 1 Teaspoon Garlic Powder
  • 1 Cup All Purpose Flour
  • Vegetable Oil, for frying
  • 4 bowls

Preparation

Step 1

Snip the end of the sausage and remove casing using kitchen shears.

Step 2

Using a bowl roll the boudin sausage meat into balls or a desired shape, then refrigerate for 1 hour or more.

Step 3

In a medium sized bowl beat the eggs then add milk and whisk for 1 minute.

Step 4

In another bowl mix the seasonings with the breadcrumbs.

Step 5

In 3 separate bowls have flour, the egg and milk mixture and lastly the breadcrumb mix.

Step 6

Remove the Boudin balls from the refrigerator and coat each one in the flour first, then into the egg and milk mix and last the breadcrumbs.

Step 7

Using a sufuria heat the vegetable oil until hot then fry the balls until they turn golden brown.

Serve right away with a dip of mayo and mustard.

Garnish with beetroot leaves and enjoy
