
A Spanish omelette, also known as tortilla española, is a classic dish celebrated for its simple ingredients and rich flavour.
Traditionally made with eggs, potatoes and onions, it is a staple of Spanish cuisine and can be enjoyed for breakfast, lunch or dinner.
To prepare the dish, you will need 225 grams of thinly sliced potatoes, four large eggs, one large onion sliced thinly, two chopped green onions, two medium tomatoes that have been peeled, seeded and chopped, half a cup of olive oil, and salt and pepper to taste.
The potatoes and onions are gently cooked in olive oil until tender before being combined with beaten eggs and the remaining ingredients.
The mixture is then cooked slowly in a pan until golden on both sides, creating a thick, hearty omelette with a soft centre.
