
To make fluffy pancakes, whisk together flour, baking powder, sugar, and salt in a bowl.
In a separate bowl, mix milk, eggs, and melted butter, then combine with the dry ingredients until just blended — don’t overmix.
Let the batter rest for a few minutes to help it rise better when cooking.
Heat a lightly greased pan or griddle over medium heat and pour about ¼ cup of batter for each pancake.
Cook until bubbles form on the surface, flip, and cook until golden brown on both sides.
