How to make delicious githeri ya 'nzuu'

Githeri ya 'Nzuu'  is a delicious meal that consists of maize and pigeon peas.

Githeri is a common dish that is loved and mostly cooked in our Kenyan households.

It has a variety and can be a mixture of maize and beans, cowpeas and pigeon peas.

It is one of the easiest dishes to make and most affordable, however, sometimes githeri may be bland tasting due to the simplicity of boiling the meal but one can make it scrumptious.

Here is what you need:

Ingredients:

2 cups of maize

2 cups of beans

1 Onion

1 clove of garlic

3 Tomatoes

1 packet of Curry powder(20gms)

1 packet of Tomato paste (20 gms)

2 green bell peppers

1 Coriander

Salt

Cooking oil

Step 1

Boil your maize and beans in a sufuria filled with clean water till the grains are soft to eat.

Drain the water after boiling the githeri.

Step 2

Wash and cut your vegetables to your preferred size and put them in separate small bowls.

Put a clean sufuria in an oven and set to medium heat, add two tablespoons of cooking fat to the sufuria.

Add the cut onions to the sufuria and fry till brown. Add a clove of garlic to the onions.

Step 3

Add the green bell pepper and tomatoes. Add a 1/2 cup and stir the ingredients together to make a thick saucy soup.

Step 4

When the soup is almost ready, add a packet of curry powder, tomato paste and salt for additional flavour. Add the boiled maize and pigeon peas to the soup and stir well.

Step 5

Garnish your githeri with sliced coriander and cover and allow it to boil for 5 minutes over low heat.

Step 6

Serve when hot with a fruit of your choice such as a banana or avocado.
