Chips mayai( French fry omelette) is a popular dish on the Kenyan coast.
It can be served up as breakfast, snack or light meal.
Ingredients
- 2 Eggs
- Fries
- Salt (to taste)
- Black Pepper (to taste)
- Vegetable oil
Preparation
Step 1
Make yourself some fries (chips) at home, or you can buy them.
Step 2
In a small bowl, whisk the eggs, add salt and pepper to taste.
Step 3
Add the fries to the bowl and mix it all well.
You can add finely chopped onions to the mixture for extra taste.
Step 4
In a pan heat oil and then add the fries-egg mixture to it. Cook for 3-4 minutes until golden from the bottom then flip and cook the other side.
Step 5
Serve hot with your favourite chili sauce or ketchup.
Enjoy it as breakfast or snack.
