Cabbage is a healthy low-calorie vegetable that many people consume as it is an excellent option for weight management.

Cooked cabbage in fact has only 34 calories. The vegetable is high in fiber which boosts energy levels and creates a sense of fullness.

Ingredients

  • 1 ½ cups Cabbage chopped
  • 1 tablespoon Olive oil
  • 1 teaspoon Garlic, finely chopped
  • 1 teaspoon Ginger, grated
  • ½ cup Onion chopped
  • ½ cup Celery diced
  • ¼ cup Carrots chopped
  • ¼ cup bell pepper, diced
  • 1 cup Tomatoes diced
  • 1 ½ teaspoon Salt
  • 6 cups of Vegetable Stock/ water
  • 1 teaspoon Dried Oregano
  • 8-10 Fresh Basil leaves, chopped
  • 1 teaspoon Red Chilli flakes
  • 1 teaspoon Pepper
  • Parsley/ Dhania, chopped (for garnish)

Preparation

Step 1

Heat oil in a large sufuria and add ginger and garlic, fry for ½ a minute before adding the onions and fry for another ½ a minute. Add the celery, the carrots, cabbage, and bell pepper and cook for 3-4 minutes.

Step 2

Add the tomatoes, salt and stock or water, bring to a boil and let simmer on low for about 20 minutes.

Step 3

Add the herbs, chilli flakes and pepper. Combine and serve hot, garnished with chopped parsley or Dhania.
