Ingredients
- 1 Kg beef
- Vegetable oil
- 3 garlic cloves minced
- ¼ cup fresh cilantro chopped
- 1 onion finely chopped
- Baby okra, chopped
- 1 teaspoon salt
- ½ teaspoon black pepper
- 4 ounces tomato paste
- 2 tomatoes chopped
Preparation
Step 1
Using a sufuria, over medium heat, heat 1 tablespoon of vegetable oil and cook the beef for 5 minutes on each side without stirring. Remove and set aside
Step 2
On the same sufuria, add the onions, garlic, and cilantro and cook until fragrant and translucent.
Step 3
Add the okra, salt, pepper, and desired spices and combine until well mixed. Cooked for 10 minutes.
Step 4
Add the tomato paste, tomatoes, and 3 cups of water to the sufuria. Add the beef that was set aside and mix to incorporate everything together. Reduce the heat to low and simmer covered for 15 minutes.
Step 5
Serve over rice, pilau, or ugali, and sprinkle fresh cilantro for garnish. Enjoy with friends and family over a cold mango juice.
