Ingredients

  • 1 cup of soy flour
  • ¾ cup maize cornflour
  • 1¼ teaspoon bicarbonate of soda
  • ½ cup (50g) cocoa powder
  • 1¼ cup sugar
  • 150g butter, melted
  • 1 tablespoon white vinegar
  • 1 cup of milk
  • 2 eggs
  • ½ cup mashed overripe banana
  • 2 tablespoons raspberry jam
  • 300 ml whipped cream, whipped (optional)
  • Baking paper

Preparation

Step 1

Preheat the oven to moderate 180 degrees. Grease the baking pan, lining the base with baking paper

Step 2

In a large bowl, sift flour, soda, cocoa powder and sugar.

Step 3

Add butter, vinegar and milk and whisk for 2 minutes

Step 4

Add eggs, banana and jam in the liquid mix and beat for 2 minutes then add in the dry ingredients and whisk for 3 minutes

Step 5

Pour the cake mixture into the pan and bake for 30 minutes

Step 6

Remove from oven to cool

Add whipped cream and enjoy with family and friends.
